Hello everyone! I'm back and I am so sorry about the lack of posts the past few months. This summer was absolutely insane with work, changing jobs, family get-togethers, and everything else! I have a new recipe that I made last night that was a complete success with the boyfriend and I, so I wanted to share it with you! This breaded chicken went really well with rice and peas and carrots. If you have any other suggestions for side dishes feel free to comment in the comment section!
2 chicken breasts, cut into strips
3 heels of whole wheat Arnold bread
2 eggs
Dried basil
Dried parsley flakes
Black pepper
Salt
Sugar
Thyme
Crushed red pepper flakes
Preheat oven at 350. Cut your chicken into strips. Set aside.
Toasts your bread heels until brown. Pull apart into quarters and place in food processor along with all your spices. Turn on low speed until bread crumbs are almost fine. Pour into a small mixing bowl and set aside.
In another small mixing bowl crack open your 2 eggs and whisk with a fork. Dip each chicken strip into the egg then toss lightly in the bread crumb bowl until evenly coated. Place each chicken strip on a sprayed cookie sheet. Bake in oven for 17-20 minutes. Enjoy!
