Mini Ham Pot Pies

Hey everybody! So recently I decided to buy some ham (my boyfriend and I eat a lot of chicken as you might notice, so I thought it would be a nice treat for us). I made a broccoli and ham quiche the other day and I didn't use that much of the ham. I bought WAY too much so now I'm trying to find more ways to use it! I decided to do a little experiment and made mini ham pot pies. I love the mini chicken pot pies that I make and its a great use for my muffin tin! I never had ham pot pies before (I've had the standard "flavors": turkey, chicken, and beef) but boy were these delicious!


Here's what you need:
1 rolled out pie crust
1/8 lb of bone in ham, cubed into small pieces
1/2 cup of frozen peas and carrots
2 cups of water
1 tbsp of all-purpose flour
Black pepper, to taste


Preheat oven at 350.

Take a section of meat that has a lot of fat on it and cut it off from the rest of the meat. Throw in a small saucepan with your water. Or take the bone from the ham and place in the water. Bring to a boil. Add black pepper.

Place flour in a mug. Gradually add in some of the ham broth and stir with a fork or whisk until smooth. Slowly pour in flour mix and stir into ham broth. Cook on medium heat for about five minutes. Then remove from heat. Take out bone and/or fatty pieces of ham that you used for the broth. Discard.

Meanwhile, take out your pie crust and place on a floured surface. Next take one large circular cookie cutter or a glass cup and cut out the pie crust. Repeat 5-6 times, depending on how much dough you have. Place each mini pie crust in the muffin tin. Don't worry if the crust rips. use some of the extra crust to fill in the holes. Take your ham and place in the bottom of the crust. Next add the peas, carrots, ham broth.

Once you've added everything into the pie crusts, take a smaller cookie cutter and cut out tops for the mini pies with the remaining pie crust. Gently place on top of the mini pies and gently press down. Try to make the edges of the bottom and top crusts meet. Once you've done that, take sharp knife and cut 2-3 slits in the top of the pies so steam can escape while baking. Cook in the oven for 40 minutes or until all the mini pot pies are golden brown on the top.
