Happy New Year, everyone! Kicking off the New Year with a simple recipe after all the holiday craziness. After the holidays with large meals, its nice to have something simple! This is pretty much the same as my Ham and Potatoes recipe but just as delicious!
Here's what you need:
3 medium-sized potatoes
1/3 of a large onion
1/8 cup of brown sugar
black pepper
salt
Preheat oven at 350.
Cut your potatoes into small cubes/wedges. Leave the skin on them so it adds extra flavor and rustic vibe to it! Spray a baking pan with cooking spray and layer the bottom with the potatoes. Set aside.
Next, dice your onion. Place onion over top the potatoes in the pan. Then sprinkle black pepper over the potatoes and onions. Repeat with salt and brown sugar.
Bake in oven for 25 minutes. Take out of oven and flip over your home fries. Throw back in the oven for another 10-15 minutes or until they are lightly browned. Enjoy!
